Mask (cut ) mesh to shape

Welcome to the Core 🙂

 

First give the disc object some thickness, or use a cylinder instead.

Then add both meshes under a boole with the mesh first in the hierarchy as Operand A, the cylinder as Operand B and the Mode to A Intersect B. Also make sure that 'create single object is ticked' so that when you subsequently make it editable with 'C' you get just the one mesh.

 

If the boole fails that will most likely be because your mesh model is not optimised / contiguous, so you'll need to do that in points mode (optimise command, all points selected).

alternatively you can delete all points of the grid that are outside of the cylinder and delete them. the select all points that are on the edge (that you want on the radius line.  Store selection. create a spherify modifier and make it a child. attach a restriction tag. link the stored selection tag to the restriction tag and use the radius in the modifier to match your desired sphere shape.
