Maintaining perspective camera FOV
User error / poor UI. When you select front, top, left, perspective etc from the Cameras menu in the viewport, these are actually camera presets which will always use the same values every time they're selected. Effectively resetting your camera back to 36mm every time. IF you want to maintain all your existing settings, don't use these presets, instead select your camera and use the first dropdown menu to select the camera type you want; this will then remember all the other settings you had dialled in. Or even better, dont switch the camera type at all, make use of the 4 views to set up views, then use F1 - F4 to switch between these preset views. -

Maintaining perspective camera FOV
Sounds like a bug - please report it. In the meantime, create a camera with the FOV / focal length you want.
